Our neighbours Rooftop Smokehouse smoke, ferment and cure at the Lehman Factory, where they restored an old chimney from 1850 that became the new smoke outlet of the Rooftop headquarters.

Pastrami cured and then smoked for 18 hours using traditional techniques with whole logs.
