Échiré is considered one of the finest butters in the world. It has been made in the small village of Échiré, in the Deux-Sèvres, since 1894. The cooperative dairy works only with milk collected within 50 kilometres, and still churns the butter slowly in traditional teak barrels.
Before churning, the cream is matured with lactic cultures for around 18 hours. This slow fermentation gives Échiré its signature character: a delicate hazelnut aroma, a subtle tang, and a texture that is dense yet melts instantly. The demi-sel version is finished with fine sea salt, which lifts the flavour and adds a gentle crunch.
Butter this expressive deserves good bread. Spread it thick on our sourdough, and let it do the rest.
